Date cake

Ingredients
- 100g spelt flour
- 150g dates
- 1 egg
- 50g butter
- 50g brown sugar
- teaspoon of baking soda
Steps
- pre-heat oven to 180c
- cut up dates, remove seeds and put in bowl
- pour just enough boiling water to cover
- add teaspoon of baking soda and stir
- let rest until cooled. (the acid will break down the dates)
- in another bowl mix sugar and butter until smooth
- mix in egg until smooth
- add date goo and mix
- add pinch more of baking soda (gives it a bit more rise)
- place in over for 15-30m
