Apple Pie

Pastry
Ingredients
- 6-8 tablespoons ice water (from 1 cup ice cubes filled with cool water)
- ½ cup (78 g) sweet white rice flour
- ¼ cup + 2 tablespoons (35 g) GF oat flour
- ¼ cup (35 g) buckwheat flour
- ¼ cup (30 g) cornstarch (or tapioca starch)
- 2 tablespoons (15 g) tapioca starch/flour (or arrowroot starch)
- 2 ½ tablespoons (15 g) finely ground golden flax seed
- 1 tablespoon (15 g) sugar (granulated, maple, or coconut)
- ½ teaspoon fine sea salt
- 8 tablespoons (115 g) cold, unsalted butter, sliced ¼-inch thick
- 1 teaspoon apple cider vinegar or lemon juice
Steps
Step 1
- Combine the flours, flax, sugar and salt.
- Add the butter and blend with fingers (some pea size chunks ok).
- Combine the water, vinegar. Sprinkle over flour 1 tblspn at a time, tossing the flour with a silicone spatula to moisten evenly. It’s done if when squeezed it holds together easily (not sticky).
- Pour it out and use the heel of your hand to scrape portions of dough across the surface (blending any large bits of butter).
- Gather the dough in a ball, flatten to a disk and wrap in plastic. Chill for 1hr, or up to 24hrs.
Step 2
- Dust surface with some oat flour.
- Roll the dough out to 1/4 inch thick oval, flipping occasionally. Periodically dust with oat flour, using a pastry brush to remove excess flour.
- Fold the dough into thirds, then fold into thirds the other way. Re-wrap and chill for 1hr or up to 24hrs.
Step 3
- Roll out and repeat the folding process.
- Wrap and chill again, 30-60mins, or up to 2 days.
Step 4
- Roll out the dough into a 12 inch circle.
- Ease it into a 9-inch pie dish (gently push into sides without stretching), trimming to a 1 inch overhang.
- Flute the edge by pressing it between the thumb of one hand and the index finger and thumb of the other hand.
- Prick the bottom with a fork, then chill for another 30-60mins, or cover and chill up to 24hrs.
Step 5
- Pre heat the oven to 400f.
- Cover the pastry with baking paper and fill with pie weights.
- Bake for ~10mins.
Filling
Ingredients
- 8 apples (granny smith)
- 1/3 cup sugar
- 1tsp lemon and/or orange zest
- 1tsp cinnamon
- 1/4tsp salt
- 2tblspn cornstarch
Steps
- Cut the apples as you like
- Saute in a pan for ~5mins until slightly soft (finish cooking in oven)
- Add the rest of the ingredients and stir to combine.
- Pour into the par-baked crust and bake at ~350f for ~1hr.
- Allow the pie to cool at least 1 hour, and then serve.
